Pesto is easy and delicious to make! You probably have many of its ingredients at home in your kitchen. You can make pesto many ways, with different herbs and greens. It allows for substitutions and creativity.
My homemade pesto includes the following ingredients:
-1 bunch of cilantro
-1/2 cup olive oil
-1/2 cup pine nuts
– 4 cloves of garlic
– a couple basil leaves
– juice of 2 lemons
-1/4 tsp cayenne pepper
– 1/4 cup grated cheese for creaminess (I had white cheddar in my fridge but pecorino would be preferred)
– Tbls of white wine vinegar
-salt & pepper to taste (this part is very important.. make sure to add small amounts of salt at a time and TASTE TASTE TASTE. The cheese in this recipe may have some added salt, so it’s important to regulate your salt accordingly. If you happen to over salt, add some more lemon juice to help balance out the salt. You can also add more olive oil and greens!
I gave this a health spin and served my pesto over a bed of spaghetti squash with some halved grape tomatoes!
