Spaghetti and Meatballs-the healthy version!

This recipe substitutes pasta with spaghetti squash, and beef meatballs for turkey meatballs. This makes for a lighter dish than the alternative, but just as tasty! First halve a spaghetti squash (long ways) dress the inside with a drizzle of olive oil, and a sprinkle of salt and pepper. Pop it in the oven face down at 400 degrees for 40 minutes. While this cooks, chop up some onion, half some tomatoes and mince a clove of fresh garlic. Add olive oil to a sauté pan and throw in the onion, tomatoes and a couple turkey meatballs. Add in some oregano, red pepper flakes and some salt and pepper. Once the meatballs are almost cooked through and the onions and tomatoes are soft, add the garlic and cook until fragrant. Toss in some spinach at the last minute. It wilts very quickly! Once the spaghetti squash is cooked, scrape out the squash with a fork and top it with the meatball/tomato mixture in your skillet. Enjoy!
